Anyone that worked in restaurants in the 90s when Chilean Sea Bass was the rave knows that it was rarely served.

EDIT: At least I think it was the hot fish in the 90s. Was there another red striped bass that was the rave then?
EDIT 2: It was red snapper I was thinking of, but apparently grouper works well for bass too.

Is this rant tongue in cheek? Goldfish are a kids staple. This is the year 2024, but they sure were when my kid grew up. They’re actually more nutritious than most other mainstream snacks.

Having grown up in Chile (or at least a few years) I can say that nothing from our Gulf tastes like “pescado.” Which is all we ever called it. We literally called it, “fish.”
But it was never the preferred catch. That was “congrio.”
